I’m enjoying the summer teasers blowing through New York these days. It’s one of those crystal clear afternoons with blue skies. Not quite warm enough for sun bathing weather but we’re getting there.
It’s also that time of year when I start craving more salads again. I’m crazy about collard greens. I started getting into them 4 years ago and thought this culinary fetish would lift. Alas, not, so here is my collard greens salad recipe (based on what was in the house) for all of my fellow collard-lovers. It’s super easy and is really just a mish-mash of whatever you have on hand.
Collard Greens Salad
Why I love collard greens:
1. Greatest cholesterol-lowering cruciferous vegetable
2. Detoxifying and anti-inflammatory
3. Cancer-fighting
Ingredients
4 collard green leaves, tough stems removed and thinly sliced
Small handful of mint leaves
2 tablespoons hemp seeds
1/2 yellow pepper, small dice
1/2 yellow squash or zucchini, grated
2 stalks celery, small dice
2 carrots, peeled, small dice
1 avocado, skin and pit removed, diced
Juice of one lemon
1-2 tablespoons extra-virgin olive oil
Maldon sea salt or Himalayan sea salt, to taste
Freshly ground pepper, to taste
Toss all ingredients together in a bowl and enjoy! Mango and cherry tomatoes are also delicious additions.
